Report on the 7th International
Hydrocolloids Conference

The
7th International Hydrocolloids conference was held in Melbourne,
Australia from 29 August - 1 September, 2004. The conference
programme was packed full of presentations from prominent
researchers in the field, both from academia and industry.
Key sessions included rheology and material properties, novel
methods, proteins and emulsions, molecular structure and interactions,
dairy applications and in particular, new applications.
Parallel sessions allowed me to choose the most relevant
presentations to my project. However, others that at first
appeared to have little relation, often had some similarities,
illustrating the how all the different areas of colloid science
complement each other.
I presented my poster on the first day, but as they remained
on display throughout the conference, this gave maximum exposure
of my work. This enabled plenty of time to discuss my work
with others, exchange ideas and meet new people working in
the field, stimulating new ideas for my PhD project.
Not only did I learn much about the broader aspects of the
field of colloid science, but the conference also gave me
a much greater depth of understanding about my own project.
As such, I would like to sincerely thank the SCI for their
generous award which helped make my attendance at this conference
possible.
