Group: Ask the Food Scientist

a Food Scientist, an initiative launched by the SCI
Food Commodities & Engineering Group in support of the
13th National Food Safety Week, was a resounding success.
The Group was flooded with a deluge of enquiries from members
of the public. Examples of questions asked were: What
is the difference between virgin and extra virgin olive oil?,
Why does chicken meat turn white when cooked, but other meats
turn a brown/grey colour? and Do we really need
all of the food additives that are currently being used?
The reheating and correct cooking of food were popular themes,
suggesting that despite being saturated with food news on
a daily basis, we are often still confused over some of the
more basic food facts.
