Synopsis

Dr. Scheelbeek will explore the connections between food systems, health, and climate change, highlighting recent trends and the urgent need for transformation. She will present solutions that support both sustainability and population health, with a focus on consumer-level change and the role of national dietary guidelines. While these guidelines influence food policy and public procurement, they rarely consider environmental impacts. Dr. Scheelbeek will discuss the challenges of balancing nutrition with climate goals and the global consequences of food systems in the Global North on the Global South. She will conclude by sharing her vision for the future, including the potential of novel plant-based foods in creating healthier, more sustainable food systems.
