Akuleti Saikumar was awarded a Seligman Travel Bursary to attend the 6th International Conference on Food Properties (ICFP6) held in Bangkok, Thailand, from 28-30 January. Here he tells us about his highlights from the conference.
At ICFP6, I delivered an oral presentation titled “Development and Characterization of Active and Intelligent Electrospun Mucilage/PVA/ZnO NPs/Anthocyanin Nanofiber Mats for Food Safety Applications.” Electrospinning is a promising technology for developing novel food packaging materials with enhanced functionality. The nanofiber mats were designed as intelligent food freshness indicators by incorporating pH-sensitive colorants (anthocyanins) that undergo visual colour changes in response to food spoilage, allowing consumers to easily monitor food quality. The developed mucilage-based electrospun nanofiber mats for active and intelligent food packaging are highly relevant and has the potential to mitigate foodborne illness risks by empowering consumers to make informed decisions about food freshness and safety.
